Dishing it up

After a crazy Thanksgiving week where I let thing break down and take-out and eating at other people's houses reigned supreme, it was time to get back on the cooking wagon and feed the family.

Nothing elaborate or really new and exciting. But there were a few recipe adjustments based on the lack of ingredients that I thought I had on hand and did not.

Monday

Burritos with:
Sweet Potato (left over that I cubed and added when I discovered that I had no beans),
Tofu "Beef" crumbles, Lettuce, Tomato, Avocado and sour cream
Salad

Tuesday
Spaghetti with Vegetarian Italian Sausage
Salad

Wednesday
Chicken Piccata
Ribbon Noodles
Salad

Thursday
5 Bean Chili
Salad
Banana Cake Muffins

Friday
Sweet and Sour Tofu
Brown Rice
Salad
Lychees (We had these in a Kam dish and thought they were really tasty. Saw them at Marc's this week and thought it was strange to see them there and decided we would have to see if they tasted like I remembered them. Since dinner is later, I'll let you know.)

Two questions:

1) How is the tofu "beef"? Totally dissimilar?

2) Can you send the chicken piccata recipe? I have an abundance of chicken in the freezer that needs to be eaten...
