This week, I have decided to try to treat my pantry and fridge like the baskets on Chopped. Like a strange assortment of things that I must try to turn into tasty dishes. This seems like a great way to clean out some of the stranger things lingering in my pantry. We'll see how I do.
Tonight's dinner
Impossibly Easy Pie (leftover style)
1 cup shredded assorted cheese (I used some Havarti, and Colby Jack sandwich slices that were getting a little dry around the edges. Don't tell Mark)
1 cup chopped honey turkey lunch meat (I would have to throw it out in a day or two if we didn't use it)
1/2 cup Jiffy Mix
1 cup milk
2 eggs
Place cheese and meat in the bottom of a pie dish. Mix other ingredients together and pour into dish. Bake at 350 for about 45 minutes, or until golden on top and fork comes out clean. Kind of tastes like a crustless quiche.
Served with a Spinach Salad
Dessert:
Strawberry, Rhubarb, Cranberry Crisp
The cupboard cleaning aspects were a small can of cranberry sauce (added a little tang), frozen strawberries from last summer's picking, and I used several packets Weight Control Maple and Brown sugar (Mark got this when he was going through and oatmeal phase and then decided he didn't like this flavor) oatmeal mixed with the steel cut oats and spices for the crumble topping.
Overall, I will give dinner an A-/B+. It was tasty and filling, if not overly creative.
