I thought that Mark would be running at the track. And I had a busy day at work, and didn't make it to the store for a few needed staples. So when the girls said that they were hungry, I decided to make pancakes. I gave them a choice of Banana, Applesauce, Plain, or Cornmeal. They finally decided on Applesauce pancakes. Great for using up some of the open jar of homemade sauce sitting in the fridge.
With tummies full, I thought the kitchen was closed.
Then Mark got home from a long day of work. No running. No eating. So what to make? I started a pot to boil some whole wheat spaghetti, but since last week was pre-Cleveland Marathon and we had eaten traditional spaghetti 3 nights in a row, I felt like I needed to mix it up for him a bit. I found some shrimp, and one small fillet of Tilapia in the freezer and cooked both with butter/olive oil and garlic, some asparagus and a bit of Serrano pepper. Topped the pasta with that concoction and some Parmesan cheese, and called it dinner.
