Poke Cake

Apparently the cake has a name. Jello Poke Cake. I have loved this cake my whole life. A recipe we make and wonder where it came from. We have always made the Lemon-Lime variety, but apparently there is an endless variety of recipes available, using Jello or Pudding for the pokes. They all sound delicious!

For those of you that have never had this dessert here is the recipe for the Lemon-Lime variety.

What you will need:
1 lemon cake mix
1 box lime jello
1 box Dream Whip frosting
1 box of lemon pudding to mix with the dream whip (mix powder in, do not prepare first)
2 small cake pans or 1 big one

Make cake as directed on box let cool. After cake has cooled prepare jello as directed on box do not put in the refrigerator, set aside. Using a fork poke holes through cake as many holes as you would like. Pour the liquid jello all over the top of the cake. Let cake chill in refrigerator. Prepare the topping, then spread all over the top of cake and refrigerate for at least 2 or 3 hours before serving. And serve for lots of good comments! You can really combine any cake mix and jello mix as long as you think they taste good together. Enjoy!
