Monday
Vegetarian Polska Kielbasa
(Sounds oddly in conflict. What is this stuff anyway?)

Acini Di Pepe Super Skillet Dish

Brown Kielbasa. Set aside. Saute carrots and mushrooms in same skillet until glazed and slightly tender (may have to add a dash of Olive Oil. The Vegetarian Kielbasa has very little fat to add to the pan.) Add 1 cup Acini Di Pepe. 2 1/2 cups of water (I use 1 cup water and 1 cup vegetable broth made with "Better than Bullion Vegetable Base" and 1/2 cup V8.) Bring to a boil. Reduce heat and simmer, covered, 10 minutes or until pasta is tender. Once some of the liquid has been absorbed I add the Kielbasa back in to warm through. Chase and Ellis really like this and it is fast and tasty vegetarian dinner option.

Crock Pot Pork Loin Roast
Potatoes and Carrots cooked with roast
Garlic and cream cheese mashed potatoes (for Mark)
Salad
